good.

recommend you don't bother to take gravity samples until it slows down, unless you are using a refractometer. otherwise you will waste too much mead.

With fruit your gravity will be in the 90's, and it will go dry. Probably less than 1.010 for FG. Possibly close to 1.000. If kept cool it will be drinkable quite quickly. the fruit will help it clear much faster too.
I like to start at 70-72 for pitching temp and then cool once the yeast is going. This involves starting the mead upstairs and moving to my cold guest room the next morning. As close to 60 as I can get for D47, mid 60's for 71B.

Well I'm using the yeast I mentioned above, White Labs WLP720.
This is the first liquid yeast I used in any of my brews.

OK, I'm familiar with it. It may take a while. Especially if you've just got one vial/no starter. I've got a really nice batch of mead that has been very slowly working for a couple months with this strain. As I said before, be patient - the yeast is in charge.

Should I add more yeast nutrient at some time and if so how much?

*throws hands in air*

...c'mon man. I told you when/how much to add. I don't have hundreds of data points to help you with here - if you added it all at once, I don't know whether or not more will or will not help you. I suspect yeah, at some time, but who knows.

sorry that came off rudely. I just spent the last two weeks on a trip I didn't want, spent most of it sick to increase the insult, and my temper was short. Apologies.

for anyone else reading, I implore you to google Staggered Nutrient Additions. I talked about this over the summer.
It works great, and I don't ever do anything else, thus I can't really comment on any other methods as I haven't used them.

...anyone that wants any of my help with mead is going to hear about SNA. that's just the way it is.

happy new year--

Update: Transfered my melomel to secondary on the eighth. Used a filter to screen out the last of the fruit and of course gave it a good aerating.
